Lumpy bumpy lemons

LEMON VINAIGRETTE 

Makes 1 cup 

A simple, bright dressing that has many uses. Always a nice addition to an otherwise rich meal. It will last well several days in the refrigerator. Add croutons, mashed garlic, and grated Parmigiano for a vegetarian Faux Caesar.

2 tsp Dijon mustard
4 TBSP lemon juice 
¼ tsp sea salt 
¼ tsp cracked Tellicherry pepper 
5 oz extra virgin olive oil 

In a mixing bowl, combine mustard, lemon juice, salt, and cracked pepper. Whisk gently to a smooth consistency. Whisk oil into mustard in one tablespoon amounts.
