wintertime tomato sauce
Makes about 4 cups
One 28-oz can whole peeled tomatoes
½ cup red or yellow onion, finely chopped
2 oz olive oil
2 TBL unsalted butter
½ tsp sea salt
2-3 sprigs fresh oregano, winter savory, or thyme, or a mix thereof; alternatively, ½ tsp dried oregano or dried rosemary
Optional: pinch of sugar
If there are any basil leaves in the tomatoes, remove them. Puree tomatoes with juice, leaving a little coarse. Simmer chopped onion in olive oil for 3 or 4 minutes until soft with a little color. Add butter, salt, herbs, and tomatoes. Simmer for 35 minutes. If the tomatoes need sweetening, add sugar.
